Mutton Liver Roast

  1. Half kilo Mutton Liver
  2. 3 onion
  3. garlic (3-4 pieces) and Ginger (larger piece): both finally crushed
  4. Red Chilli poweder (1/2 Tbsp)(kashmiri chilli preferred)
  5. Coriander powder ((1/2 Tbsp)
  6. Turmeric (1/4 Tbsp)
  7. Pepper powder (1/4 Tbsp)
  8. coriander whole seeds (5-10 Nos)
  9. Pepper (crushed 5-6 Nos)
  10. Fennel and Cumin Seeds (together 1/2 Tbsp, relatively more Fennel seeds.
  11. Meat Masala (2-3 Cardamom, little nutmeg, 1-2 pieces of Clove and cinnamon for flavour.
  12. Hari Mirch (2-3 Nos cut one into two pieces style)
  13. curry leaves (if available), coriander and Mint leaves
  14. salt, depends

Steps and Process

  • Make mutton liver into small pieces and wash it well. keep it soaked with turmeric, salt and lemon for 2-30 minutes. Washed enough and keep the piece for dry water for sometime. 
  • Heat the pan without oil and heat the masala ( Add 9 & 10 incredients, once it enough dried remove from the pan. Add powder masala to the pan after switched off  the flame. )
  • Crush the garam masala ingredients (except pepper) either in mixi or  crush it manually (with stone mortar & Pestle: This or similar  may be available in every kitchen) Do not make a powder. 
  • Mix the masala,  powders and salt to liver pieces (washed and kept for dried for sometime).
  • Add one or two crushed (with hands) mint leaves as well. 
  • Keep masala mixed liver pieces for 30 minutes or more for marination. If room temperature is high, keep the mix in fridge. 
  • Switch stove and keep a  pan and add oil (as per your preference) once pan get enough heat. 
  • Crush ginger and garlic and add to the pan and stir it well.
  • Add  nicely chopped onion into the pan.  Add little salt and stir it well till it get golden colour. 
  • add few curry leaves (if available).
  • Keep the masala mixed liver pieces to the low flame and add the fried onion, ginger and garlic to the mix and stir is slowly. (Use curry pan or pressure cooker).
  • stir it or keep it on low flame and saute well untill oil seperated. Once oil sepreated add Green Chilli pieces and cook in low flame (if it is pressure cooker normal visil for mutton curry).
  • No need to add water. however the meat were freezed for long time, then add half glass of warm water.
  • Once it cooked, open the lid and keep it flame for some more time in low flame till it get roast with thick gravy (not to keep it still it get dried up).
  • Add crushed pepper and Coriander seeds
  • once switched off, add few sliced coriander leaves and cover it for 5-10 mints. 
  • Enjoy.
